When Father Pierre Pérignon took over as cellar master at the Benedictine Abbey of Hautvillers in 1668, his avowed goal was "to make the best wine in the world", and there are few other Champagnes that could rival a brand as iconic, elegant and recognisable as Dom Pérignon. From its antique label to the distinctive bottle shape based on 17th Century designs, Dom Pérignon has become ingrained in international culture as a symbol of luxury. But beyond the hype, its unwavering commitment to excellence has meant that Dom Pérignon is also recognized by serious wine critics as a consistently exceptional example of the top tier of Champagnes.

Dom Pérignon is a brand that embraces the true magic and sensuality of wine-making, guided by timeless principles that have always taken precedence over winemaking techniques and their evolution. It ages on its lees in the bottle for a minimum of seven years before riddling and disgorgement. After the yeast is removed, the Champagne is stored for another six months before being released for sale around the globe. Unlike many competitors, Dom Pérignon is exclusively a vintage Champagne. As a result all of his Champagnes are made from wines produced in the same, single year. It is a rigorous, exacting process and the ability to assess a good year is derived from decades of experience. If a vintage is not up to  standards no Dom Pérignon will be released for that year. As a rule, it is made no more than six times per decade, making each bottle a true luxury to be savoured. As its creator famously said, “Come quickly, I am drinking the stars.”
